1 whole chicken
1 lemon, quartered
1 head of garlic, halved
1 white onion, quartered
1 bunch of rosemary
salt and pepper
2-3 tablespoons olive oil

Preheat oven to 425 degrees F. Rinse and pat dry the chicken, then add the next four ingredients into the cavity. Season the outside of the chicken with olive oil and a generous amount of salt and pepper. Bake for 1 hour. Take out and tent with foil for 15 minutes, then carve.
