1 head cauliflower, rinsed, dried, chopped
3 medium sized sweet potatoes, chopped into thick sticks
3 medium red onion, halved and sliced
3 tablespoons olive oil
salt and pepper

Preheat oven to 425 degrees F. Place all vegetables on a parchment paper lined baking sheet. Drizzle on olive oil and season with salt and pepper. Bake for 30 minutes. Serve immediately.
