1/2  cup light olive oil, plus more for waffle iron
1 cup rice flour
1/2 cup almond meal
1/2 cup arrowroot powder
2 tablespoons brown sugar
1 teaspoon baking soda
1 1/2 teaspoons baking powder
1 teaspoon xanthum gum
1/2 teaspoon salt
1 teaspoon cinnamon
1/4 teaspoon freshly grated nutmeg
3 large eggs, room temperature
2 cups coconut milk
1 tablespoon vanilla
1/4 teaspoon almond extract

Heat waffle iron. Sift together all dry ingredients; set aside. In a separate bowl mix all wet ingredients and whisk until well incorporated. Add wet ingredients to dry ingredients and stir until combined.

When waffle iron is ready, oil iron then add 1/2 cup of mixture; close lid and cook for 3-5 minutes.
