1/2 cup rice flour
1/4 cup almond flour
1/4 cup arrowroot
1 teaspoon xanthum gum
1/2 teaspoon salt
1 1/2 tablespoons baking powder
1 teaspoon cinnamon
1/4 teaspoon nutmeg
1 tablespoons honey
1 cup coconut milk
1 egg
4 tablespoons coconut oil (melted) or light olive oil
1 tablespoon vanilla
1/4 teaspoon almond extract


Mix dry ingredients together, whisk and set aside. Mix wet ingredients, then add to dry ingredients and mix until well combined. Add more coconut milk if batter is too thick. Grease a hot griddle and cook until little air bubble form and flip.
